Picking wild sprouts and herbs for flavorful soups, risotto and omelettes is popular in these hills: here you'll find rampussoli (rampion), pissacani (dandelion), bruscandoli (hop sprouts), rosole (poppy-head), gallinelle (chard) and sparesele (small wild asparagus). Bigoli al torchio were invented here: an egg pasta similar to large spaghetti with duck ragout; home made tagliatelle with the mescola (rolling pin) or risi e bisi (rice and peas) are part of the country cuisine. Try the famous Padovan Chicken, one of the oldest bird breeds, stuffed guinea-fowl and fried chicken. Here we also cook "torresani", the home version of the doves that nest in the towers and bell towers. The "Mountain sweet prosciutto" is excellent, renowned since 1890. The Euganei Hills Wine Route also passes through here.
